Apple & berry crumble muffins, Thanks Louise for sending us this one they do sound good I will give them a go and let you know.

Apple & berry crumble muffins

5 1/2oz self-raising flour
5 1/2oz whole-meal self-raising flour
1/4 teaspoon ground cinnamon
4oz soft brown sugar
6 floz milk
2 eggs
4 1/2oz unsalted butter melted & cooled
2 granny smith apples peeled cored & grated
5 1/2oz berries of your choosing

Crumble
5 tablespoons plain flour
2oz Demerara sugar
1 1/2oz rolled oats
1 1/2oz unsalted butter chopped

pre-heat oven¬†¬†class=”hiddenSpellError” pre=”oven “>190c /375f /gas mark 5

Sift the flours & cinnamon into a large bowl,& stir in the sugar. Make a well in the centre.
Put the milk, eggs & butter in a jug, whisk & pour into the well. Fold gently until just combined-the batter should be lumpy.

Fold in the fruit.

Divide into 12 muffin cases.
To make the crumble put the flour, sugar & oats into a bowl. Rub the butter in with your fingertips, until most of the lumps have gone. Sprinkle 2 teaspoons of the crumble over each muffin. Bake for 25 mins or until golden.

Instead of berries you can also use cherries as a change. Hope you like them as much as my family & I do.
